Eshell dependencies: Fix recent regressions

* lisp/dired.el (dired-insert-directory): Tweak bug#27817's ugly hack.

* lisp/eshell/em-ls.el: Refine 'require's.

* lisp/eshell/esh-opt.el: Require esh-util on behalf of its clients.
